8 Quart Versa Pot

Have used this 8 qt pot numerous times over the past several weeks, and am very pleased with it. I use it mainly to create meat stock, stewing meat, bones, fowl carcasses, etc. for long periods of time, adding salt, cider vinegar, etc. to extract as much goodness as possible from it all. It's safe to do that, as there's no leaching or chemical reactions, unlike with 18/10 stainless steel, which is what most pots are made from.

Having created the stock, I can then leave it in the same pot, take out the bones and make stew by adding vegetables. When that's done, I can put the whole thing in the fridge to keep, again with no worries about leaching. Of course care is needed to allow the pot to reach an appropriate temperature before going from extremes of heat/cold, as well as not using metal utensils on the ceramic. But such is just common sense, and no problem.

I feel this has been a great purchase and the 8qt size is ideal for the quantities I make - gives enough to make a large quantity of stock/stew and leave it in the fridge for a few days. as we help ourselves. The 8 qt size is enough for us, as the 10 qt is going to be both heavier and bulkier, though not having used one, I can't be sure what it would be like.

I've not yet used the pot in the oven, only on the stovetop, but I suspect it will perform just as well when I do. Once again, very happy with this purchase.

Great pot for Currying

I use this pot to curry Asian foods and the curry seems to even taste better than the older aluminum pot I was previously using :-)

Awesome!

I debated for a long time between the 8 and 10qt stock pots, and am so glad I went with 8! It's quite large and fits a big batch of chili very nicely. Right now our household is just myself and my husband, but I think this will serve us well for years to come as we grow our family. And to be honest, a larger pot would be tough to store! I do wish that the lid for the 8qt pot was the same as our 11" wok, but they are slightly different. Either way, this thing is awesome and we love it! As with our other Xtrema pots/pans, it cleans super easy with a quick soak if needed.

Wow!

I'd read that there was a difference in how food cooks and how it ultimately tastes when it's cooked in ceramic vs. metal, but I couldn't really wrap my head around it until I did it myself. You really do need less oil to get the job done. The lid really does seal in the natural moisture of the food. My roasted veggies looked like they were steamed and their natural moisture was intact (which I'm guessing means that the nutrients were also intact). Overall, great experience. I fully committed by ditching my metal cookware. I'm now ceramic all the way.
