Have used this 8 qt pot numerous times over the past several weeks, and am very pleased with it. I use it mainly to create meat stock, stewing meat, bones, fowl carcasses, etc. for long periods of time, adding salt, cider vinegar, etc. to extract as much goodness as possible from it all. It's safe to do that, as there's no leaching or chemical reactions, unlike with 18/10 stainless steel, which is what most pots are made from.
Having created the stock, I can then leave it in the same pot, take out the bones and make stew by adding vegetables. When that's done, I can put the whole thing in the fridge to keep, again with no worries about leaching. Of course care is needed to allow the pot to reach an appropriate temperature before going from extremes of heat/cold, as well as not using metal utensils on the ceramic. But such is just common sense, and no problem.
I feel this has been a great purchase and the 8qt size is ideal for the quantities I make - gives enough to make a large quantity of stock/stew and leave it in the fridge for a few days. as we help ourselves. The 8 qt size is enough for us, as the 10 qt is going to be both heavier and bulkier, though not having used one, I can't be sure what it would be like.
I've not yet used the pot in the oven, only on the stovetop, but I suspect it will perform just as well when I do. Once again, very happy with this purchase.
